Winged Beans (Psophocarpus tetragonolobus) are the major food crop of the South and Southeast Asia tropics! This incredible legume is wholly edible, the beans are eaten like soy beans, the leaves like spinach, and the roots like potatoes. A crop by many names, Winged Beans are also called dragon beans, horned beans, four angled beans, asparagus beans, or goa beans and known in other countries as Sigarilyas, Chathura Payar, Đậu rồng, Bayum, shikaku mame, and urizun. The 6-8 inch long waxy, frilled bean pods grow on 10-13 feet long vines and bloom edible pale blue flowers.
