168 ADOBE BAKE OVEN OF THE SOUTHWEST

Primitive ovens are used by both Indians and Mexicans for baking bread. Fire is built in the oven and after the walls are heated the hot coals are removed and the oven cleaned, the prepared dough is then placed inside with a long spade-like stick. The hole or chimney on top and the door are closed with large flat rocks. The retained heat of the oven completes the baking.
