Recognized as a particularly fine confectionery, Marron Glace
requires a high quality raw material as well as the know-how of a master
confectioner. From the fruit, then protected by its thorny bug, picked
up in the chestnut groves during the fall, to the delicious delicacy
coiled in its packaging, sixteen steps will be necessary to make it. The
saga of the Clement Faugier Establishments, or how two families linked
their history to that of the Ardeche chestnut. It was in 1882, when the
local Ardeche silkworm farming economy was going through a crisis due to
an epidemic, that Clement Faugier, a young local man, created the first
Marrons Glaces factory in Privas. With a gastronomic tradition, he
combines innovation and audacity, thus carrying out the industrial
production of Marron Glace while retaining the qualities of artisanal
know-how. The history of Etablissements Clement Faugier will merge with
that of brown. The transmission of know-how was perpetuated by the
children, in particular Charles Faugier "master confectioner" whose son,
Jean, will join the Boiron family, the main supplier of chestnuts.
Since 1970, Claude Boiron and today his son Jean-David Boiron have been
president of the destiny of the company, perpetuating the tradition
established by Clement FAUGIER. Thus linking the two ends of the chain,
from quality chestnuts and chestnuts to a production that respects
traditions, the Etablissements Clement Faugier today tell a story made
up of passion and constancy, where the meeting of two professional
