These short-necked, spouted vessels with open mouths were used to serve hot wine and later in the making of tea which had become a popular beverage by the Song Dynasty. Thus, these ancient Chinese ewers were used not only for steeping both ritual wine and tea, but also as pitchers for dispersing hot water into individual tea bowls where it was whisked with dried powdered tea leaves.
