How adjustable is shelf height? Could I leave the bottom shelf off?

Yes, I removed a shelf and evenly spaced out the shelving for more room. All the shelves are independent and can be adjusted to desired height.

Yes, you can leave off the top shelf and bars. You can make it as short or tall as you want.

Can this be disassemble？

Yes it can. When put together the shelves are held in place by little brackets, then the shelves are pushed down on top of the brackets. To take it apart you would push the 4 corners of each shelf up, take off the brackets, then unscrew the poles.
